New York Strip Pūpū by Scotty Roberts of Makawao Public House

Chef Scotty Roberts is Makawao born and raised and brings a level of excitement to be able to cook in his home town. He has spent 14 years cooking in restaurants on Oʻahu and in Lahaina town, and shares his recipe for New York Strip Pupu.
Ingredients
- 6 oz. New York Strip
- Avocado oil to coat pan
- Salt & pepper to taste
Sauce:
- 1/2 cup Sugar granulated
- 1/2 cup Lemon juice
- 1/3 cup Fish sauce
- 2 Tbs Garlic minced
- 1 Hawaiian chili pepper seeds removed
- 1/4 cup Cilantro chopped
- 1/4 cup Mint chopped
- 1/2 Japanese cucumber
- 1/4 Red onion
Instructions
- Wash cucumber and take seeds out, slice in ½ then in to bite sizes.
- Slice onion.
- Add lemon, sugar, fish sauce, garlic, chili pepper, cilantro, mint, cucumber and onion into a bowl and mix thoroughly.
- Heat pan .
- Add avocado oil to coat pan.
- Sear meat until desired doneness.
- Let rest for 5 minutes.
- Slice and pour sauce over then enjoy.
