Hawaiian Iced Tea Latte by Lehia Apana
Lehia Apana founded Polipoli Farms with her husband Brad and she believes the farm is returning them to their indigenous roots while cultivating the farm of their dreams. Today they grow native and Polynesian plants in regenerative food forests, then turn their harvests into healthy and convenient farm goods, and lucky for us she shares a few of their recipes that she makes with ingredients grown off the ʻāina they farm as their ancestors did. Another wonderful story of resilience from Maui.
Ingredients
- 4 parts chilled Polipoli Māmaki + ʻUlu tea
- 1 part kō (sugar cane) juice or substitute with other sweetener to taste
- Splash of fresh or canned coconut milk to taste
- Serve over ice
- 1-2 Coconuts meat
- 4-5 cups coconut water or warm water (or combination of the two)
Instructions
How to make fresh coconut milk
- Meat from 1-2 coconuts (brown shaker, fully mature coconut where the husk is brown; want mature coconut because it has high fat content, combine with less mature coconut because itʻs sweeter and meat is softer, and that helps the consistency of the milk, makes milk nice and creamy).
- Directions: Combine coconut meat and liquid (coconut water or water) in a high-speed blender.
- Blend on maximum speed for 1-2 mins.
- Strain using a nut milk bag and squeeze until coconut fiber is dry.
