Must Try

Southern comfort meets local island tradition in this unforgettable breakfast dish by Chef Mari Wills, Season 1 Fan Favorite on Kitchen Scraps. Drawing inspiration from her years living in Georgia and her hands-on experience as a kitchen researcher in Hawaiʻi, Chef Mari reimagines the classic biscuits and gravy with a nutritious, local twist.

By utilizing steamed, blended ʻulu (mature breadfruit) as the creamy foundation for the gravy, this recipe achieves a rich, velvety texture with a fraction of the heavy butter and cream typically required. Paired with savory diced Portuguese sausage and baked over freshly made herb biscuits, it’s a hearty meal that celebrates local staple ingredients.

Biscuits & ʻUlu Gravy By Chef Mare Wills

Whether she's teaching, developing recipes, or inspiring the next generation of chefs, her passion for local food shines through in everything she does.
I fell in love with cooking ‘ulu in 2019 where I worked as a kitchen researcher. I loved how versatile it was for both sweet and savory dishes but also how it can be made into sauces to lower the amount of butter and cream needed because it can become creamy when blended or mashed, making it a ‘healthier’ alternative.
The inspiration for this dish was based off of my time living in Georgia, where biscuits and gravy were a breakfast staple. I took this southern classic and gave it a Hawai’i twist by making the gravy with ‘ulu and the beloved portuguese sausage.
