Chili Loco Moco
This is a version of loco moco that I actually found on a dolores chili brick package. I decided to try it and I use it to make chili all the time…. I love the seasonings and it is even better if you add ground beef and kidney beans to it.
Ingredients
- 1 20 oz. Dolores Chili Brick (found in freezer section)
- 1 cup beef broth
- to taste Hot sauce
- 1 lb. hamburger
- 1 egg
- 1/2 onion chopped
- to taste Salt and pepper
- 4 eggs sunny side up
Instructions
- Prepare Dolores Chili Brick according to package instructions.
- Add hot beef broth in place of water and stir until incorporated. Bring to a boil then reduce to a simmer for 20 minutes while stirring.
- Add Tabasco sauce or other hot sauce to taste.
- Chop onions and combine with ground beef along with 1 egg. Divide ground beef into 4 portions. Shape into patties. Season with salt and pepper and grill or fry each patty in a pan on both sides until desired doneness. Allow to rest.
- Fry eggs to your preference.
- Assemble the Loco Mocos by scooping some steamed rice into a bowl, then stacking on a beef patty followed by a fried egg.
- Ladle hot Dolores Chili around rice and over the Loco Moco if desired and garnish with green onion.
How To Serve:
- Serve with a side mac salad!
