Rushin Beef Stew by Shannon K. I’i

Great work Shannon! Today in the kitchen Shannon says she chose to share this dish because it reminds her of her grandmother. She made so many cool treats but this was by far her favorite and most easy to make. This was her grandmothers go to potluck dish for every church event she attended. When Shannon realized it had cottage cheese in it she thought she wouldnt like it but when it was complete and she got to lick the spoon she absolutely loved it!
Ingredients
- 2 lbs stew meat
- 3 large potatoes
- 2 large yellow onions
- 1 bunch celery
- 1 bag baby carrots (peeled)
- 1 small head cabbage
- 32 oz chicken broth
- 19 oz bottle banana sauce
- 1 tbsp olive oil
- to taste Garlic salt
- to taste Pepper
Instructions
- Prep all vegetables: I) Peel and cut the potatoes. II) Cut the celery, onions, and cabbage into bite-sized pieces (cut style depends on preference).
- Cut the stew meat into bite-sized pieces, if necessary, as pre-packaged meat may be too large.
- Heat a pan over medium heat, add about 1 tablespoon of olive oil, and heat the oil.
- Add the meat to the hot oil and brown it on all sides to create a crispy outer layer (approximately 5 minutes). Season with garlic salt and pepper while browning. Avoid overcooking to prevent a rubbery texture.
- Pour in the entire contents of the chicken broth (or 4 cups if using homemade broth).
- Add the entire bottle of banana sauce. Fill the banana sauce bottle a quarter way with water, shake it up, and pour it into the pot.
- Add the potatoes and carrots to the pot. Let them simmer for approximately 10 minutes.
- Add the remaining vegetables (celery, onions, and cabbage) and let simmer for about 30 minutes.
- Stir every 5 minutes for the first 15 minutes of simmering, then let it simmer undisturbed for the remaining 15 minutes.
- Serve warm and enjoy!
