Fresh Healthier Layered Dip
Who says healthy isn't tasty. Try this fresh, lower fat version of the classic layered bean dip served with baked whole wheat tortilla chips. I will also be posting great vegetarian recipes – Join me for some great healthier alternatives on my Meatless Monday recipes.
Ingredients
Baked Whole wheat Tortilla Chips
- 8 whole wheat tortillas
- Macadamia nut oil or cooking spray
- Fine Hawaiian salt
Dip
- Fat Free/Low Fat Shredded Vegan Cheese (optional)
- Can Fat Free Refried Beans (I prefer Jalapeno flavored)
- Low Fat Sour Cream
- Fresh Avocado diced
- Fresh Tomato diced
- Can low sodium black beans
Instructions
Chips
- Heat oven to 375.
- Cut tortilla strips into quarters or triangles.
- Place tortilla strips on cookie sheet, lightly brush on macadamia nut oil or olive oil cooking spray.
- Sprinkle with fine hawaiian salt and chili powder.
- Bake for about 15 minutes or until golden brown and crispy.
Dip
- Layer in a bowl, cup or glass baking dish the refried beans, black beans, sour cream, cheese, avocados, tomatos.
- Olives and green chilles are also great!
