Baby Octopus Skewers – a version of a Mediterranean dish my husband and I shared while in Washington DC at a celebrity chef’s restaurant. I have had other versions, at sushi bars, tapas restaurants, all different and all unique and wonderful. I love the flavors or lemon and oregano.

Grilled Baby Octopus Skewers

Materials

  • 1 lb. baby octopus, thawed
  • Wooden bamboo skewers, soaked in water 30 minutes

Garnish:

  • lemon wedges

Marinade:

  • 1/4 c. olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 2 t. salt
  • 1 T. black pepper
  • 1 T. dried oregano
  • 1 T sriracha
  • 1/2 t. ground clove
  • 3 garlic cloves, mashed

Instructions

  • Place marinade ingredients with octopus into a zip-lock bag.
  • Marinate overnight.
  • Massage it every now and again (this process helps tenderize octopus).
  • Skewer and grill over charcoal until cooked through.

How To Serve:

  • Serves with lemon wedges.
  • Serves 6-8.
