Hawaiian Iced Tea by Lehia Apana
Lehia Apana founded Polipoli Farms with her husband Brad and she believes the farm is returning them to their indigenous roots while cultivating the farm of their dreams. Today they grow native and Polynesian plants in regenerative food forests, then turn their harvests into healthy and convenient farm goods, and lucky for us she shares a few of their recipes that she makes with ingredients grown off the ʻāina they farm as their ancestors did. Another wonderful story of resilience from Maui.
Ingredients
- 8 cups water
- Polipoli large tea bag (about 8 tablespoons; or about 1 tablespoon per cup of water)
- 2 T kō (sugar cane) juice or substitute with other sweetener to taste
- to taste Squeeze of lemon
Instructions
- Combine water and tea and bring to a boil. Steep for 10+ minutes; longer for more robust flavor. Strain and chill. May be steeped twice.
- Serve over ice. Serves 8
