Pineapple Brunch Cake
This Pineapple Brunch Cake recipe was shared by an inn keeper at a favorite bread and breakfast spot on Oahu. A favorite enjoyed by out of town visitors and kamaaina alike.
Ingredients
- 1/3 c. butter, softened
- 1/3 c. sugar
- 1 large egg, beaten
- 1/2 c. milk
- 1 tsp. vanilla extract
- 2 c. all purpose four
- 3 tsp. baking powder
- 1 tsp. salt
- 1 (9 oz.) can crushed pineapple, undrained
Topping:
- 1/3 c. all purpose flour
- 3 TB sugar
- 1 tsp. cinnamon
- 3 TB butter
Instructions
- Preheat oven to 350 degrees.
- Lightly grease a 9-inch baking pan.
- In a mixing bowl; cream together butter and sugar well.
- Beat in egg, mile and vanilla. Stir in dry ingredients.
- Add pineapple. Mix just until blended.
- Transfer mixture into prepared pan.
- In a mixing bowl; combine topping ingredients.
- Sprinkle onto cake.
- Bake 30-35 minutes.
How To Serve:
- For service: cut in squares.
- Serve warm.
- Serves 6-8.
