Pineapple Brunch Cake

Ingredients
  

  • 1/3 c. butter, softened
  • 1/3 c. sugar
  • 1 large egg, beaten
  • 1/2 c. milk
  • 1 tsp. vanilla extract
  • 2 c. all purpose four
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 1 (9 oz.) can crushed pineapple, undrained

Topping:

  • 1/3 c. all purpose flour
  • 3 TB sugar
  • 1 tsp. cinnamon
  • 3 TB butter

Instructions
 

  • Preheat oven to 350 degrees.
  • Lightly grease a 9-inch baking pan.
  • In a mixing bowl; cream together butter and sugar well.
  • Beat in egg, mile and vanilla. Stir in dry ingredients.
  • Add pineapple. Mix just until blended.
  • Transfer mixture into prepared pan.
  • In a mixing bowl; combine topping ingredients.
  • Sprinkle onto cake.
  • Bake 30-35 minutes.

How To Serve:

  • For service: cut in squares.
  • Serve warm.
  • Serves 6-8.
